A chocolate chip cookie ice cream sandwich is absolutely the perfect treat to cool off with during those hot summer days or a sweet treat to have at a party. This recipe has a classic chocolate chip cookie with a chewy center that bonds with vanilla ice cream in the middle. It’s an absolutely delicious homemade chocolate chip cookie ice cream sandwich, a classic treat that everyone will love!
Chocolate Chip Cookie Ice Cream Sandwiches
Ingredients
- 1 Stick Butter Room Temp
- 1/2 Cup Brown Sugar
- 1/4 Cup Granulated Sugar
- 1 Egg Egg Room Temp
- 1 Egg Yolk Room Temp
- 2 tsp Vanilla Extract
- 1 1/2 Cup All Purpose Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 Cup Chocolate Bar Chopped
- 1/2 Cup Chocolate chips + Extra For toppings
- 1 Pint Favorite Flavor Ice Cream
Instructions
- Preheat the oven at 350 degrees.
- In a large bowl, sift and mix all-purpose flour, baking soda, baking powder and salt together. Set the dry ingredients aside.
- Mix butter, brown sugar & granulated sugar for approximately 3 minutes- the goal is to have a creamy consistency – depending the power of your mixer/beater and the temperature of the butter it can take anywhere between 3-5 minutes.
- Mix in the egg, egg yolk and vanilla extract.
- Slowly mix in the dry ingredients ( all purpose flour, baking soda, baking powder and salt).
- Chill the dough for a minimum of 30 minutes. You can chill it longer if desired.
- Roll the chill dough into balls- scoop 2 tablespoons of the dough and roll into balls or weigh the cookie dough balls to approximately 50grams by using a food scale.
- Place the dough balls 2 inches apart on the cook sheet.
- Bake the cookies for 10-12 minutes or until golden brown edge appears.
- Let the chocolate chip cookies cool completely prior to adding the ice cream- if not the warm cookie will melt the ice cream as you assemble it together. To speed up the cooling process- cover the chocolate chip cookies in an airtight container or plastic bag and place them in the freezer until the cookies completely cool down. Approximately 15 minutes
- Once the chocolate chip cookies have cooled down- scoop out the ice cream and place it on the bottom of the cookie and place the other cookie on top. Once you assemble the cookie sandwich together, place it back in the freezer for approximately 30 minutes- to allow the ice cream and the cookie to bind together.
- While assembling the chocolate chip cookie ice cream sandwich you can add extra topping around the outside of the ice cream. The type of toppings that can be added are endless. Be creative! – optional
